In 2013 Matthieu joined Le Cordon Bleu London as the first Wine Development Manager. He developed and teaches the Diploma in Wine, Gastronomy and Management. In 2018, Matthieu began teaching the Birkbeck and Le Cordon Bleu Bachelor of Business Administration in Culinary Industry Management.
